Rinse the quinoa thoroughly and cook it according to the package instructions.
Steam or boil the mixed sprouts until they are tender but not mushy. Drain any excess water.
Mix quinoa, mashed potato, sprouts, veggies, garlic, ginger, spices, breadcrumbs, and herbs in a bowl. Blend well.
Take a small portion of the mixture and shape it into a round cutlet. Repeat with the remaining mixture.
Heat oil in a pan over medium heat. Place the cutlets on the pan and cook until they are golden brown on both sides, turning them gently.
Once cooked, transfer the quinoa sprouts cutlets to a serving plate. Serve them hot with your favorite chutney, yogurt, or a side salad.
