Buckeyes Recipe

Buckeyes' peanut butter centers are partially dipped in chocolate to imitate the Ohio nut. Holidays and college football season are popular for these candies.

INGREDIENT

For the filling: – ½ cup unsalted butter room temperature – 2 cups creamy peanut butter – 2 teaspoons vanilla extract – 4 cups powdered sugar sifted – ¼ teaspoon kosher salt For the chocolate coating: – 12 ounces semi-sweet chocolate chip – 1 tablespoon shortening

INSTRUCTION

Use parchment on a big baking sheet. Beat butter, peanut butter, and vanilla in a stand mixer with the paddle attachment or a large bowl with an electric mixer on medium speed.

Step 1

Reduce mixer speed and mix salt and powdered sugar. Medium-mix for 2 minutes. Use a 1-tbsp cookie scoop to measure dough. Add scooped balls to baking sheet. Rough balls OK.

Step 2

Refrigerate dough balls for an hour. Cool balls and quickly roll in palms to smooth edges. Freeze the tray for an hour. Combine shortening and chocolate chips in a microwave-safe bowl.

Step 3

Stir after 1 minute in microwave. Melt and smooth chocolate in microwave 15 seconds. Keep a circle on top after toothpick-dipping peanut butter balls in chocolate.

Step 4

Remove excess chocolate from the bottoms using the bowl's edge and return to the parchment-lined baking sheet. Harden chocolate-dipped buckeyes in fridge.
