This Bacon Blue Cheese Spinach Dip is perfect for game day and can be made in skillets or baking dishes!
INGREDIENTS

– 1 Tbsp olive oil, plus more for brushing dish– ¾ cup diced onion– 2 tsp minced garlic– 10 oz. fresh baby spinach– 8 oz. cream cheese, room temperature– 1 cup sour cream– 1 cup shredded mozzarella– 1 cup crumbled blue cheese– ½ cup crumbled bacon– 1 tsp pepper– 1 tsp red pepper flake– ⅛ tsp salt
INSTRUCTIONS
Heat oven to 350°F and lightly grease 6 5" mini cast iron skillets or an 8x8 baking dish.

Step 1
Stir olive oil into a large skillet over medium heat. While hot, cook onion for 6 minutes until soft and golden. Garlic and cook another minute until fragrant.

Step 2
Reserve onion and garlic in a large bowl. Wilt half the spinach in the skillet for 4 minutes. Cook remaining spinach in skillet 3–4 minutes until wilted.

Step 3
Straining cooked spinach with a wooden spoon removes water. Pour into onion-garlic bowl.

Step 4
Mix cream cheese, sour cream, mozzarella, blue, bacon, pepper, red pepper flakes, and salt in bowl. Make sure everything mixes. Pour mixture into skillets or baking dishes.

Bake dip 10-12 minutes in 5" skillets until golden. Bake 8x8 dish 20-22 minutes until golden. Broil dip 2 minutes to golden.With tortilla chips, crackers, or your favorite dippers!
