Air-fried meatballs are juicy and soft within and crunchy outside. These meatballs go well in spaghetti, sandwiches, and appetizers!
INGREDIENT
– 2 egg– 2 tablespoons sour cream or ricotta cheese– ¼ cup milk– 1 cup Italian-seasoned breadcrumb– 2 tablespoon unsalted butter– 1 tablespoon olive oil– 2 shallots finely diced– 3 cloves garlic minced or grated– 1 pound ground beef I recommend using 80/20 ground beef– 1 pound ground pork– ⅓ cup freshly grated Parmesan cheese– ⅓ to ½ cup finely minced fresh parsley– 1 teaspoon Italian seasoning– Salt and pepper to taste

INSTRUCTION
Mix eggs, milk, sour cream or ricotta, and breadcrumbs in a small bowl. Let soak 20 minutes. While everything soaks, melt butter and olive oil in a skillet. Simmer shallots 3-5 minutes, garlic 1 minute. Place aside after cooking.

Step 1
Mix ground beef, pork, parmesan, parsley, soaked breadcrumbs, Italian seasoning, shallots, and two large pinches of salt and pepper in a large bowl. Mix well by hand. Cool meatballs 20 minutes. Improves portioning.

Step 2
Pat a tablespoon of mixture into a small patty and sear in a skillet while resting. Salt and pepper the meatball mix and taste the patty. Use a cookie scoop (2 teaspoons) to place all the meat on a lined baking sheet.

Step 3
Roll each meatball into a palm-sized ball after portioning. Avoid dense meatballs by not oversqueezing blend. Spray-fried meatballs. They'll brown nicely. Start your air fryer @ 400°F for 5 minutes.

Step 4
Arrange meatballs by size in the air fryer. Flip meatballs about midway through cooking at 400°F for 10minutes. Incorporate into pasta sauce, recipes, or freeze.
